Dominick Chirichillo
Dominick Chirichillo grew up in New Jersey, where his grandfather introduced him to the art of winemaking. He began making wine with his grandfather's hand press, and two barrels of wine later, Dominick began selling them to friends and family. He also started a winemaking club, the Bacchus Winemaking Club, which allows amateur winemakers to handcraft their own wine.
Dominick Chirichillo's passion for winemaking took him from amateur competitions on the East Coast to commercial status in Northern California. He now works with hand-picked California grapes, sourcing them from vineyards in the Santa Cruz Mountains, the Lodi District, and Alexander Valley. His wines have received over 300 awards and won numerous competitions.
Bacchus Winemaking Club
The Bacchus Winemaking Club at Domenico Winery is an opportunity for amateur winemakers to learn the process of wine making. The club focuses on the production of small batches of Italian varietals. The winery sources grapes from Lodi, Napa, and Amador counties in California.
Dominick Chirichillos began making wine as a hobby in his basement, and in 1991, he and his wife, Gloria, planted an eight-acre vineyard in Amador County, California. After harvesting the grapes, they began to market the wine under the Domenico Winery label and started a tasting room. The winery was a success, and the Bacchus Winemaking Club was born.
Origin of grapes used at Domenico Winery
There are two kinds of grapes grown at Domenico Winery. These grapes are Primitivo and Zinfandel. Each of these varieties has its own characteristics and evolutionary history. In California, Primitivo is grown in regions that are similar to those found in Puglia, Italy. Primitivo is known for its concentrated flavors and aromas, which can include wild blackberry, raspberry, and clove. These flavors are often described as jammy.
Domenico Winery produces more than 20 varietals. It specializes in Cal-Italia varietals. It has won 350 medals for its wines from California's various regions.
